Discerning diners will fall in love with the White Swan at Shawell, thanks to the finesse of Chef Patron Rory McClean and his talented team. It thrills from amuse bouche to the final smidgeon of dessert, expressing Rory’s enduring passion for preparing and presenting fabulous food.

This 33-year-old king of his own Michelin-commended kitchen sharpened his skills in seriously good culinary company. During a two year Professional Chef Scholarship course with Westminster Kingsway College, London, Rory had placements with Angela Hartnett at the Connaught and Marcus Wareing at the Berkeley.

“It was like a work-based apprenticeship,” he says. “You learned classical techniques in college and then found out what was really going on in the industry working in the restaurants.”

The long hours curtailed his social life and left him a little shy, but Rory delighted in the buzz of a busy kitchen and in feeding the hungry. By 2012 it was a natural step to return to his home town of Rugby and open his own fine dining restaurant, supported by his dad and fiancée, Samantha. He arranges private chef hire to people’s homes and nowadays is learning another new skill, that of enjoying increasingly frequent contact with customers.
